Biologic farm
Podere San Jacopo is a family-run organic farm, located in the heart of Monteregio, 7 km from Massa Marittima and 300 m above sea level.
The company covers an area of 20 hectares: 12 hectares of arable land and 4 of specialized olive groves.
We cultivate, organically, ancient varieties of fine cereals such as “Senatore Cappelli” durum wheat and “Gentil Rosso” soft wheat, in rotation with legumes and clover.
Using this rotation specification, we prepare the ground with ancient methods, thus allowing us to avoid any use of chemicals or similar products.
These processes make it possible to produce food in compliance with extremely high quality standards, sustainable and in line with tradition and the purest quality.
Pasta
Unic taste
Podere San Jacopo pasta is produced by grinding ancient durum wheat “Senatore Cappelli”, grown on the farm with organic methods.
The grinding is done with stone in order not to alter the nutritional characteristics of the highest quality present in the product.
The flour obtained is rich in fiber, vitamins, trace minerals and flavonoids, with a low gluten content.
The pasta, after being drawn in bronze, undergoes a slow drying process, at a low temperature, in order to preserve all the qualities of the original product.
This process gives it a unique taste, like it used to be.
our Oil
extravirgin Olive Oil
Over 1000 olive trees of native varieties: Leccino, Frantoio, Moraiolo, Pendolino.
The product obtained from the mixture of these cultivars has a greenish yellow color with golden reflections.
On the palate it is pleasantly bitter and spicy, while on the nose it recalls delicate herbaceous hints of artichoke, which make it ideal for enhancing all types of meat, dips, vegetable and bean soups.
We personally take care of every single plant, from pruning to olive production and harvesting, which is hand made as in the past.
The oil is extracted in our company oil mill to guarantee the quality of our excellent product.
